Using an air fryer allows the sweet potatoes to cook evenly while developing a lightly crisp exterior and a soft, fluffy interior, without the need for excessive oil. 

The filling brings together melted cheese for richness, green chillies for heat, and a blend of dried herbs for aromatic depth, creating a balanced contrast to the sweetness of the potato. 

This dish works well as a wholesome evening snack, a light meal, or even an innovative starter when entertaining. It is simple to prepare, yet thoughtfully layered in flavor, making it a reliable recipe for everyday cooking.

Ingredients

  • Sweet Potato – The ones that we get in India and Asian countries are primarily white on the inside unlike the orange ones that you get in the US. This recipe works with both and taste quite simple and amazing. 
  • Melted Cheese – The primary base of the filling. 
  • Green Chillies or Chilli Flakes – I am using Green chillies because I like the rawness of these fresh chillies. You can use Chilli Flakes as well. 
  • Mixed Dried Herbs – I am using a mixture of rosemary, basil and oregano. Change the composition according to your needs. 

How To Make Air Fryer Sweet Potatoes with Cheese Chilli Herb Filling?

Start by washing the sweet potatoes thoroughly under running water to remove any dirt, since we will be cooking them with their skin on. 

Pat them dry with a kitchen towel. Lightly brush or rub them with a little oil (this helps the skin crisp up beautifully in the air fryer) and, if you like, sprinkle a tiny bit of salt. 

Preheat your air fryer if required, then place the sweet potatoes in the basket, making sure they are not overcrowded

Air fry them at 180°C for about 20–25 minutes, turning them halfway through, until they are soft and cooked through on the inside. You should be able to easily pierce them with a knife or fork when they’re done.

Important Note: Different air fryers have different settings. The 180°C for 20–25 minutes is a rough estimate. I highly recommend you to keep checking the sweet potatoes every once in a while after 15 minutes. 

While the sweet potatoes are cooking, start preparing the filling. 

Take your preferred cheese (mozzarella, processed cheese, or any good melting cheese works well) and melt it gently

You can do this in a small pan over low heat or in the microwave in short bursts. Stir occasionally to ensure the cheese melts evenly and doesn’t burn. The goal is to achieve a smooth, creamy, molten texture that will easily spread inside the sweet potatoes. 

Set this aside but keep it warm so it stays nice and gooey.

In a small pan, add your finely chopped green chillies (or chilli flakes, if using) along with the mixed dried herbs (rosemary, basil, oregano, or your preferred combination).

Dry roast or lightly sauté this mixture for 1–2 minutes on low heat. This quick heating step helps release the aroma of the herbs and slightly softens the raw bite of the chillies while still keeping their freshness and heat. 

Be careful not to burn the herbs—you’re just looking for a light smoky, fragrant boost of flavor.

Once the sweet potatoes are done cooking, carefully remove them from the air fryer (they’ll be hot!). 

Let them cool slightly so you can handle them. 

Using a sharp knife, cut each sweet potato lengthwise down the middle, creating a pocket for the filling. Gently press the sides to slightly open them up—this helps make room for all that delicious cheese and topping.

Now comes the fun part. 

First, spoon or spread a generous amount of the melted cheese into the center of each sweet potato.

Make sure the cheese sinks into the soft flesh for maximum gooeyness. On top of the cheese, add the chilli herb mixture, spreading it evenly so every bite gets a bit of heat and herby flavor. 

You can adjust the quantity of chillies based on how spicy you like your snack.
