I’m Aniruddha Banerjee, the creator of RecipeMeOut. For me, food has always been more than something we eat. It is a memory, a story, a culture, a comfort, and often, the easiest way to connect with people. Every region of the world has its own flavors, techniques, ingredients, and traditions, and I started RecipeMeOut to explore that beautiful diversity through vegetarian cooking.

RecipeMeOut is built for anyone who loves vegetarian food, whether you are a lifelong vegetarian, someone trying to include more plant-based meals in your routine, or simply a curious food lover looking for new ideas. The goal of this blog is to make vegetarian cooking exciting, approachable, and full of variety.

Vegetarian food is not limited, boring, or repetitive. In fact, some of the most flavorful dishes in the world are vegetarian, and RecipeMeOut is here to celebrate them.

And by the way, when I say vegetarian, I aim to include vegan as well.

Why RecipeMeOut Was Started

I have been a vegetarian since 9th Grade.

If you ask me why I quit eating non-vegetarian food, the answer is simple.

I just didn’t want to.

That’s it.

That’s the answer.

There was no dramatic incident, no huge philosophical speech, and no complicated explanation behind it. One day, I simply felt that non-vegetarian food was no longer something I wanted to eat, and I followed that feeling. Over time, what started as a personal choice became a part of who I am. It shaped the way I looked at food, the way I explored cuisines, and the way I understood the incredible creativity that exists within vegetarian cooking.

Growing up, I realized that vegetarian food is often misunderstood.

Many people think vegetarian meals are just side dishes, salads, or simplified versions of “main” dishes. But that could not be further from the truth. Across India and around the world, vegetarian food has its own identity, its own depth, and its own magic. From spicy Indian curries to comforting Italian pastas, from Middle Eastern dips to Asian stir-fries, from Mexican street-style dishes to hearty soups and stews, vegetarian food can be bold, rich, satisfying, and unforgettable.

That is what RecipeMeOut is about.

It is not just a place to find recipes. It is a place to discover how much is possible with vegetables, grains, lentils, beans, herbs, spices, fruits, dairy alternatives, nuts, seeds, and simple pantry ingredients. It is a space where vegetarian cooking is treated not as a limitation, but as an invitation to experiment.

On RecipeMeOut, you will find vegetarian recipes inspired by different parts of the world. Some recipes will be traditional, some will be adapted, and some will be completely experimental.

The common thread is that they will all be vegetarian, practical, and made with real home cooks in mind.

I want the recipes here to feel doable. Not everyone has hours to spend in the kitchen every day. Not everyone has access to rare ingredients or fancy equipment. That is why I try to keep things approachable, with clear steps, simple explanations, and helpful alternatives wherever possible. If a recipe uses an ingredient that may not be easy to find, I will try to suggest substitutions.

If a dish can be made vegan, I will mention that too.

Because RecipeMeOut is vegetarian-first and vegan-inclusive, I want this blog to be useful for different kinds of eaters.

Some people may eat dairy. Some may avoid it. Some may be exploring plant-based meals for health reasons, ethical reasons, environmental reasons, religious reasons, or simply because they enjoy good food.

Celebrating Global Vegetarian Food

One of the biggest inspirations behind RecipeMeOut is global cuisine. Every country has something beautiful to offer, and food is one of the most enjoyable ways to learn about the world. A single dish can tell you so much about a place — its climate, history, agriculture, festivals, family traditions, and everyday life.

Vegetarian food exists everywhere. Sometimes it is obvious, and sometimes it is hidden in plain sight.

A humble bowl of dal, a plate of falafel, a vegetable paella, a mushroom risotto, a tofu stir-fry, a chickpea tagine, a potato taco, a lentil soup, a fresh bruschetta, or a simple herb rice dish — each one carries a story.

RecipeMeOut is my way of collecting those stories and bringing them into one space. I may not always recreate every dish in the most traditional way, but I will always try to respect the spirit of the cuisine. The idea is not to claim perfection. The idea is to learn, cook, taste, adapt, and appreciate.

My Cooking Philosophy

My cooking philosophy is simple: food should be flavorful, enjoyable, and accessible.

A good vegetarian dish does not need to be complicated. Sometimes, all it takes is the right spice, the right texture, or the right cooking method to turn basic ingredients into something memorable. Roasting can make vegetables sweeter and deeper. Tempering spices can completely change the flavor of a dish. Fresh herbs can brighten a meal.

A squeeze of lemon can bring everything together.

I believe vegetarian cooking teaches creativity. When you cook without relying on meat, you naturally start paying more attention to flavor layers, textures, colors, and balance. You learn how to make lentils hearty, how to make mushrooms savory, how to make tofu exciting, how to make vegetables the center of the plate, and how to build meals that feel complete.

That creative challenge is one of the reasons I love vegetarian food so much.
