- 1 medium sweet potato washed, skin on
- 1 tsp oil
- 40 g melting cheese mozzarella or processed cheese
- 1 green chilli finely chopped (or ½ tsp chilli flakes)
- ½ tsp mixed dried herbs rosemary, basil, oregano
- Pinch of salt
Wash the sweet potato thoroughly and pat dry. Lightly rub it with oil and sprinkle a pinch of salt.
Preheat the air fryer if needed. Place the sweet potato in the basket and air fry at 180°C for 20–25 minutes, turning halfway, until soft inside.
While it cooks, melt the cheese gently in a microwave or small pan until smooth and creamy.
In a small pan, lightly dry roast the chopped green chilli and mixed dried herbs for 1–2 minutes on low heat to release their aroma.
Once the sweet potato is cooked, remove it from the air fryer and let it cool slightly. Cut it lengthwise to create a pocket.
Spoon the melted cheese into the center of the sweet potato.
Top with the chilli and herb mixture.
Serve immediately while the cheese is hot and gooey.
