Ingredients
  

  • 1 medium sweet potato washed, skin on
  • 1 tsp oil
  • 40 g melting cheese mozzarella or processed cheese
  • 1 green chilli finely chopped (or ½ tsp chilli flakes)
  • ½ tsp mixed dried herbs rosemary, basil, oregano
  • Pinch of salt

Instructions
 

  • Wash the sweet potato thoroughly and pat dry. Lightly rub it with oil and sprinkle a pinch of salt.
  • Preheat the air fryer if needed. Place the sweet potato in the basket and air fry at 180°C for 20–25 minutes, turning halfway, until soft inside.
  • While it cooks, melt the cheese gently in a microwave or small pan until smooth and creamy.
  • In a small pan, lightly dry roast the chopped green chilli and mixed dried herbs for 1–2 minutes on low heat to release their aroma.
  • Once the sweet potato is cooked, remove it from the air fryer and let it cool slightly. Cut it lengthwise to create a pocket.
  • Spoon the melted cheese into the center of the sweet potato.
  • Top with the chilli and herb mixture.
  • Serve immediately while the cheese is hot and gooey.

Notes

  • Cooking time may vary depending on your air fryer, so start checking after 15 minutes.
  • Both white Asian sweet potatoes and orange varieties work well in this recipe.
  • Optional toppings: black pepper, olive oil drizzle, or a squeeze of lemon.
