- 1 cup spinach (cleaned and stems trimmed)
- 2 tbsp Alfredo sauce
- 1 tbsp coconut milk
- 1 tbsp onion (chopped)
- 1 tsp garlic paste (or mashed garlic)
- 1 tsp olive oil
- ¼ tsp chilli flakes
- ¼ tsp dried thyme
- Salt (as required)
Heat olive oil in a pan over medium heat.
Add garlic paste and sauté briefly until fragrant.
Add chopped onions and cook until soft and translucent.
Add the spinach and cook until wilted.
Season with salt and stir well.
Pour in the coconut milk and simmer for 1–2 minutes.
Add the Alfredo sauce and mix until the spinach is evenly coated.
Sprinkle chilli flakes and dried thyme.
Simmer briefly until creamy, then turn off the heat.
Serve hot as a side dish, pasta topping, or with toasted bread.
