Ingredients
  

  • 1 cup fresh tomatoes (chopped)
  • 1 tsp American mustard sauce
  • 1 cup pasta (80% cooked)
  • ½ tsp ginger paste or freshly grated ginger
  • 1 tsp sweet & spicy tomato ketchup
  • ½ tsp honey
  • ¼ tsp smoked paprika powder
  • ¼ tsp chilli flakes
  • 1 tbsp oil
  • Salt to taste

Instructions
 

  • Heat oil in a pan over medium heat. Add chopped tomatoes and cook until soft, pulpy, and slightly jammy. Season lightly with salt.
  • Transfer cooked tomatoes to a blender. Add mustard sauce, honey, ginger paste, ketchup, smoked paprika, and chilli flakes. Blend until smooth.
  • Heat a little oil in a pan and pour in the blended sauce. Simmer for 2–3 minutes until slightly thick and aromatic.
  • Add the 80% cooked pasta and toss well to coat in the sauce. Cook for a few minutes so the pasta absorbs the flavor.
  • Add a splash of pasta water if needed to loosen the sauce. Adjust salt, sweetness, or spice to taste.
  • Serve hot, optionally garnished with chilli flakes, olive oil, or fresh herbs.

Notes

  • Cook pasta only about 80% before adding to the sauce so it finishes cooking while absorbing flavor.
  • Adjust honey, mustard, or chilli flakes to balance sweetness, tanginess, and heat.
  • A splash of pasta water helps create a smoother sauce.
