- 1 cup fresh tomatoes (chopped)
- 1 tsp American mustard sauce
- 1 cup pasta (80% cooked)
- ½ tsp ginger paste or freshly grated ginger
- 1 tsp sweet & spicy tomato ketchup
- ½ tsp honey
- ¼ tsp smoked paprika powder
- ¼ tsp chilli flakes
- 1 tbsp oil
- Salt to taste
Heat oil in a pan over medium heat. Add chopped tomatoes and cook until soft, pulpy, and slightly jammy. Season lightly with salt.
Transfer cooked tomatoes to a blender. Add mustard sauce, honey, ginger paste, ketchup, smoked paprika, and chilli flakes. Blend until smooth.
Heat a little oil in a pan and pour in the blended sauce. Simmer for 2–3 minutes until slightly thick and aromatic.
Add the 80% cooked pasta and toss well to coat in the sauce. Cook for a few minutes so the pasta absorbs the flavor.
Add a splash of pasta water if needed to loosen the sauce. Adjust salt, sweetness, or spice to taste.
Serve hot, optionally garnished with chilli flakes, olive oil, or fresh herbs.
