Coconut Chia Pudding
This creamy coconut chia pudding is one of my favorite easy recipes for a healthy breakfast, snack, or light dessert. It is made with coconut milk, chia seeds, honey, and vanilla essence. I love serving it chilled with fresh fruits, nuts, granola, or a little extra honey on top.

- 3 tablespoons chia seeds
- 1 cup coconut milk
- 1 tablespoon honey
- ½ teaspoon vanilla essence
Pour the coconut milk into a cup, bowl, or small jar.
Add the honey and mix well until it blends properly with the coconut milk.
Add the vanilla essence and stir again so the flavor spreads evenly.
Add the chia seeds to the coconut milk mixture.
Stir everything properly, making sure the chia seeds are evenly mixed and not clumping together.
Let the mixture sit for 5 to 10 minutes. Stir it every 2 minutes so the chia seeds do not stick together.
Once the chia seeds start absorbing the coconut milk and the mixture becomes thicker, cover the cup or jar.
Refrigerate the pudding for at least 1 hour, or until it becomes cold, creamy, and fully set.
Serve chilled and enjoy as it is, or add your favorite toppings.
- If you like a sweeter pudding, you can add a little more honey. Also, you can replace honey with agave syrup or maple syrup.
- For a thicker pudding, add a little more chia seeds.
- For a thinner pudding, add a small splash of coconut milk before serving.
- Stirring the pudding during the first few minutes helps prevent lumps.
