Coconut Chia Pudding

This creamy coconut chia pudding is one of my favorite easy recipes for a healthy breakfast, snack, or light dessert. It is made with coconut milk, chia seeds, honey, and vanilla essence. I love serving it chilled with fresh fruits, nuts, granola, or a little extra honey on top.

Ingredients
  

  • 3 tablespoons chia seeds
  • 1 cup coconut milk
  • 1 tablespoon honey
  • ½ teaspoon vanilla essence

Instructions
 

  • Pour the coconut milk into a cup, bowl, or small jar.
  • Add the honey and mix well until it blends properly with the coconut milk.
  • Add the vanilla essence and stir again so the flavor spreads evenly.
  • Add the chia seeds to the coconut milk mixture.
  • Stir everything properly, making sure the chia seeds are evenly mixed and not clumping together.
  • Let the mixture sit for 5 to 10 minutes. Stir it every 2 minutes so the chia seeds do not stick together.
  • Once the chia seeds start absorbing the coconut milk and the mixture becomes thicker, cover the cup or jar.
  • Refrigerate the pudding for at least 1 hour, or until it becomes cold, creamy, and fully set.
  • Serve chilled and enjoy as it is, or add your favorite toppings.

Notes

  • If you like a sweeter pudding, you can add a little more honey. Also, you can replace honey with agave syrup or maple syrup.
  • For a thicker pudding, add a little more chia seeds.
  • For a thinner pudding, add a small splash of coconut milk before serving.
  • Stirring the pudding during the first few minutes helps prevent lumps.
