Coconut Chia Pudding
Coconut chia pudding is one of my favorite easy recipes when I want something light, creamy, and healthy without spending too much time in the kitchen.
I love how simple it is to prepare, and the best part is that it needs only a few ingredients. The chia seeds soak up the coconut milk and turn into a soft, fluffy pudding with a lovely texture. I also like adding a little honey for natural sweetness and vanilla essence for a warm, comforting flavor.
This recipe is perfect for breakfast, a quick snack, or even a healthy dessert.

Ingredients

- Chia Seeds – The main ingredient that absorbs the milk and gives the pudding its thick, fluffy texture.
- Vanilla Essence – Adds a sweet, warm flavor and makes the pudding smell delicious.
- Coconut Milk – Makes the pudding creamy, rich, and naturally dairy-free.
- Honey – Adds natural sweetness and balances the mild flavor of the chia seeds and coconut milk.
How To Make Coconut Chia Pudding?
Start by pouring a good amount of coconut milk into a cup or small bowl. I like using coconut milk because it gives the pudding a rich and creamy taste.
Next, add the sweetener of your choice. I used honey because it gives a lovely natural sweetness. Stir it well so the honey mixes properly with the coconut milk. And of course, you can use any sweetener of your choice – like maple syrup or agave syrup.
Now, add a few drops of vanilla essence. This gives the pudding a nice aroma and makes the flavor even better. Mix everything together until well combined.


After that, add the chia seeds. Stir the mixture properly so the chia seeds are evenly spread throughout the milk.


Let the mixture sit for about 5 to 10 minutes. During this time, stir it every 2 minutes so the chia seeds do not stick together or form lumps. Slowly, the chia seeds will absorb the coconut milk and become soft, thick, and fluffy.

Once the pudding has thickened, place it in the refrigerator to chill for a few hours. After it becomes cold and creamy, it is ready to enjoy.

How To Serve?
I love serving coconut chia pudding chilled because it tastes fresh and creamy. You can enjoy it just as it is, or you can add your favorite toppings to make it even more delicious. Fresh fruits like banana, mango, strawberries, or blueberries go really well with this pudding.
You can also add nuts, granola, shredded coconut, or a little extra drizzle of honey on top. It makes a great breakfast, a healthy evening snack, or a light dessert after meals. I usually serve it in a small glass or bowl so it looks simple, pretty, and ready to enjoy.

Ingredients
- 3 tablespoons chia seeds
- 1 cup coconut milk
- 1 tablespoon honey
- ½ teaspoon vanilla essence
Instructions
- Pour the coconut milk into a cup, bowl, or small jar.
- Add the honey and mix well until it blends properly with the coconut milk.
- Add the vanilla essence and stir again so the flavor spreads evenly.
- Add the chia seeds to the coconut milk mixture.
- Stir everything properly, making sure the chia seeds are evenly mixed and not clumping together.
- Let the mixture sit for 5 to 10 minutes. Stir it every 2 minutes so the chia seeds do not stick together.
- Once the chia seeds start absorbing the coconut milk and the mixture becomes thicker, cover the cup or jar.
- Refrigerate the pudding for at least 1 hour, or until it becomes cold, creamy, and fully set.
- Serve chilled and enjoy as it is, or add your favorite toppings.
Notes
- If you like a sweeter pudding, you can add a little more honey. Also, you can replace honey with agave syrup or maple syrup.
- For a thicker pudding, add a little more chia seeds.
- For a thinner pudding, add a small splash of coconut milk before serving.
- Stirring the pudding during the first few minutes helps prevent lumps.
