Ingredients

Ingredients for mango pudding arranged on a counter including fresh mango chunks, milk, sugar, and corn starch.
  • Fresh, Ripe Mangoes – choose Alphonso if possible, I am using the Himsagar variety.
  • Corn Starch – helps thicken the pudding and gives it a smooth, creamy texture.
  • Full Fat Milk – adds creaminess and balances the richness of the pudding.
  • Sugar – enhances the sweetness and brings out the mango flavor. Skip if you don’t like sugar.

How To Make Mango Pudding?

Start by washing and peeling the fresh ripe mangoes. Cut the mango flesh into small cubes so they blend easily and smoothly.

Make sure to use sweet and ripe mangoes because they give the pudding its rich flavor, natural sweetness, and vibrant color. Avoid fibrous or sour mangoes for the best texture and taste.

Transfer the chopped mango pieces into a blender jar. Add the sugar and milk along with the mangoes. Blend everything together until you get a smooth and creamy mango puree without any lumps. The mixture should have a silky consistency so the pudding turns out soft and velvety after cooking.

In a separate small bowl, add a little milk and mix in the corn starch. Stir it properly until the corn starch completely dissolves and forms a smooth liquid mixture. This step is very important because it prevents lumps from forming later while cooking. Keep this mixture aside for use in the next step.

Pour the blended mango mixture into a skillet or non-stick pan and place it over low to medium heat. Stir gently while it heats up so the mixture does not stick to the bottom of the pan.

Once the mixture becomes warm, slowly pour in the prepared corn starch slurry while continuously stirring.

Keep cooking for a few more minutes until the mixture begins to thicken slightly. You will notice the texture becoming smoother, creamier, and more pudding-like.

Do not overcook, as the pudding will continue to set further while cooling and refrigerating.

Once the pudding mixture reaches the desired consistency, remove it from the heat and allow it to cool slightly.

Pour the mixture into a glass bowl, serving cups, or any decorative dessert bowls of your choice. This gives the pudding a beautiful presentation and makes it ready for serving later.

Place the bowls in the refrigerator or freezer for about 2 hours so the pudding can set properly and become chilled. Once fully set, the Mango Pudding will have a soft, creamy, and refreshing texture.
